There are tons of myths and misinformation regarding oysters. Below we will try to clarify fact from fiction for a few as well as provide tips on shucking our oysters.

Is it safe to eat oysters in summer months?

This was a long standing myth that oysters should not be consumed in months without an "R".  This was mostly due to the natural reproductive cycles of oysters during the summer months.  We produce an oyster that does not spawn and therefore can be consumed year round.  Additionally, during the summer months, we are required to have our product in the cooler by 11 a.m. and it must reach a safe temperature within two hours.  This makes oysters one of the most regulated seafood products in the U.S.

What is the difference between a farm raised oyster and a wild caught oyster?

The biggest difference between a farm raised oyster and a wild oyster is that farm raised oysters are grown in cages.  They inhabit the exact same water, however, we purchase the oysters and "plant" them in cages that we must maintain and then after several months, harvest.  Farm raised oysters have a distinct benefit in that they are never in the sand/muddy bottom.  Our oysters are in the middle of the water column and are much cleaner than wild oysters.  This is impacted in the flavor, which is ultra clean, sweet and salty.
